Only a Thousand Bottles

Send a Text Message to The Kosher Terroir There’s a particular kind of regret that only shows up in a well-stocked wine cellar: the bottle you were thrilled to buy, then walked past for years because tonight never felt “important” enough. From Jerusalem, I start with a real bottle on my desk, a Yarden Cabernet Sauvignon 2003 from Golan Heights Winery, grown in volcanic basalt soils and built to last, and I use it to ask a tougher question than “what should I drink?” Are we buying wine for the life we actually lead, or for the life we imagine we’ll lead? We break down how collections quietly balloon through perfectly sensible decisions, especially when you buy three or six at a time. Then we name the promises hiding behind the labels: wine for the near future, wine with someone’s name on it, wine you mean to follow over time, and the “special occasion” bottle that becomes too heavy to open. Along the way, I explain what time really does to wine, why most bottles are meant to be enjoyed sooner than we think, and why “later” is a crowded place. The most practical shift comes from a simple idea: give someday a date. I share the Rosh Chodesh Club model, where the occasion is already on the calendar, and you finally bring the bottle you’ve been walking past. Tied to Parsha Vayera and the Gemara’s line “the righteous say little and do much,” the message is clear: make the invitation, be present at the table, and let wine serve hospitality instead of replacing it. We also get concrete with the math, using monthly bottle flow to figure out what “enough” looks like, and what needs to start moving from the back shelves. If you’ve ever saved a great kosher wine for a perfect night that never arrives, this one will help you choose a night and open it. There’s a particular kind of regret that only shows up in a well-stocked wine cellar: the bottle you were thrilled to buy, then walked past for years because tonight never felt “important” enough.

Subscribe, share this with a friend who’s always “waiting for the right occasion,” and leave a review so more people can find Kosher Terrois.
