Mix and set aside the cornmeal, whole wheat flour, salt, baking powder, and baking soda (if using), in a large bowl. In a separate bowl mix the buttermilk or milk, eggs, oil, and honey. Combine the two bowls together. When the mixture is combined, add the chia seeds. Don’t over mix. Fill mini muffin tins 2/3 full, and bake for 8 - 10 minutes.
