Hello Two Shot Podcast listener pals and a happy new year to you. We're back with a bang for 2022 and it's a sit down with chef Gary Usher!

It's been two years since Gary and Craig sat down to eat chilli and have a gas (listen back to that one here if you haven't already). The world of restaurants has changed a bit since then so we thought it was time for a catchup to see how Gary was getting on.

We went to see Gary at his Kala bistro in Manchester city centre. He had a lovely lunch and a lovely chat. Gary and Craig talk professional flexibility, fake TV, streamlining, peaks and troughs, customer complaints and loads, loads more.
