Root beer originated from Indigenous herbal preparations and European medicinal decoctions, evolving over centuries into a quintessential American soft drink. European explorers initially adopted sassafras root from Native American remedies, mistaking it for a cure-all and turning it into an early transatlantic export. By the 19th century, pharmacists routinely boiled botanicals like sassafras, licorice, wintergreen, and sarsaparilla into concentrated decoctions, adding sugar and carbonation to improve taste. Pharmacist Charles Hires brought root beer to the commercial mainstream after presenting his recipe at the 1876 Philadelphia Centennial Exhibition, marketing the herbal concentrate as a refreshing temperance alternative to traditional beer.
The beverage expanded across the United States through brand innovations, commercial scaling, and evolving production science. In 1919, Roy Allen launched a roadside stand that capitalized on post-World War I celebrations, later partnering with Frank Wright to create A&W and pioneer one of America's earliest franchised restaurant models. While traditional brewing relied on yeast fermentation, a process that produced microscopic, trace amounts of alcohol alongside natural bubbles, modern commercial manufacturers utilize forced carbonation machinery to produce completely alcohol-free beverages. Modern root beer production continues to evolve, encompassing both craft brewing methods that caramelize raw honey over direct flames and home kitchen formulations that blend safe, safrole-free botanical extracts with sparkling water.
